Well they did just that at times. At least once during the battle when Persians were getting owned bad they actually advanced basically like in the movie and massacred them, driving them out of the valley.
Then later, after the withdrawal and with their numbers diminished it turned again towards individual combat, basically simply trying to kill as many enemies as possible, with less attention paid to defense.
Eventually they moved out of the narrows entirely and basically challenged more Persians to come at them and die, even tho there's just 50 dudes left. So instead they shot like a million arrows at theem to kill these surviving now-level-99 Spartans.
