doubt it, 99% of all Undertale fangames are just Sans/Papyrus fights anyways so it wouldn't be as interesting
The only cancelled, non sans or soul fangame I can remember is Overtale, which had an absolutley insane scope, they wanted to make a 3d open world game with real time combat, it was cancelled two years after being announced

There was also Undertale Nihilism wich was about replaying Undertale after a genocide route or something
it was cancelled because the main dev was a pedo
