As long as she gets the Yoshi version of the fight then it's easy. I think she'd have some trouble actually picking up the big guy to throw him for the regular version of the fight.
If underhanded tactics are allowed for lack of a better word, some simple fire magic or a particularly strong water torrent would also do the trick, maybe.
Hard to tell how strong the man actually is so I can't say how a head-on clash with her in dragon form would go. It's anyone's guess at that point.
