It's the culmination of multiple rounds of submitting to players wanting characters to be stronger followed by content creep to catch up with that submission. Characters have no animation commitment, attacks are instant and ranged and homing and you can attack while moving and the attacks bounce and hit everything and then everything that you hit explodes and damage doesn't interrupt you and healing is instant and works mid animation and charges refill over time and mana is infinite. Given that starting point of character power it is IMPOSSIBLE to make a souls-like boss which can adequately challenge the player. You either have to make the mechanics one-shot people OR you fill the screen with unavoidable bullshit to constantly chip away at player shields and healing otherwise there is no way they will ever die
You cannot create boss fights which threaten a player with attrition over time by punishing mistakes if the player's kit has so few restrictions that there are no mistakes to be made and their healing is so free and abundant that they can't ever fall to attrition
