The Hobbit was rewritten to match up with LotR (Gollum gives Bilbo the ring for different reasons in post-LotR version for example), Stephen King rewrote a ton of shit in his books, children's books like Roald Dahl and RL Stine's works get updated, I'm fairly certain Narnia was adjusted as the writer added more prequels and sequels, etc., Oliver Twist was edited by Dickens to remove the rampant anti-semitism, and so on and so on.

This literally always happens. Remastering literally involves rescanning the film. With modern technology. It is then digitally edited with modern technology, because the other way of doing that is how George Lucas did it, and why his studio no longer had 'original' film reels for the first three Star Wars films, because he had to manually cut the reels for the special editions.
