You could not get away with selling wild pigeon meat in Chinese restaurants. And no self-respecting owner would screw over his customers like that. And if they DID serve pigeon meat, that's actually pretty classy. French fine dining places serve pigeon. But it's a complete waste of time and resources to kill and pluck and gut street birds even if you could do it without anyone noticing. It's far cheaper to just buy the chicken the menu touts.
But if you EVER find a story of this happening in the United States (to be clear; Chinese restaurants serving street pigeons as chicken) be sure and post a link. I'd be interested to read about that.
