McDonald's definitely uses higher quality ingredients than the average Chinese fast food restaurant. Both those chicken balls and nuggets come frozen in a giant sack, they just get finish fried on order. McDonald's publishes where their nuggets come from (Tyson Foods) since they face national scrutiny. Yet the Chinese restaurants just use various mystery Chinese distributors.

You could not get away with selling wild pigeon meat in Chinese restaurants. And no self-respecting owner would screw over his customers like that. And if they DID serve pigeon meat, that's actually pretty classy. French fine dining places serve pigeon. But it's a complete waste of time and resources to kill and pluck and gut street birds even if you could do it without anyone noticing. It's far cheaper to just buy the chicken the menu touts.
But if you EVER find a story of this happening in the United States (to be clear; Chinese restaurants serving street pigeons as chicken) be sure and post a link. I'd be interested to read about that.

Easy doesn't matter when labor is borderline free. What you should be comparing is the cost of chicken vs the cost of a free pigeon or cat. Though cats are much more likely since you get more meat per cat.

I've long thought about for profit pigeon harvesting. They reproduce and mature incredibly fast, are comfortable living in cramped housing with a billion other birds, you can free range them and just let them fly and eat bugs and shit and they'll always come back home which cuts down on food costs. Only risks are disease and birds of prey. I've never processed a bird before but it can't be that hard right?
