More topically, the term "cracker-barrel" is defined as " Folksy; characteristic of simple small-town people."
In other words the exact opposite of the kind of people who would stomach Chipotle or whatever the coaster management is trying to emulate.
This is what is wrong with this situation, not that they removed an old white guy from the logo, but what that is symptomatic of; 30-something year old white women and metrosexuals, almost always from either the west coast or the northeast, getting into these places and turning their product into these soulless, monochrome slabs to attract a "wider audience" (read: the people they know). I believe people who use the term gentrification are harming the impoverished and desperate by not allowing anything to get them out of the literal ghetto, whether they are unknowingly doing it or not, but fundamentally there is some truth to what they are talking about
