For starters Ulquiorra was actually the main character's rival and had a role in capturing & keeping Orihime captive. If you think Jugram breaking Ichigo's tensa zangetsu was "mindbreaking" then remember Ulquiorra straight up murdered Ichigo once before their eventual fight. And they had a satisfying final fight too meanwhile Jugram fought Uryu instead, a fight where 50% of it was pretty much offscreened.
