You give Kubo too much credit. I can see the choices with Ichiruki being rather easy since most of the groundwork is already there. With Ulquihime however, it would make less sense than Renruki. You'd need like at least two chapter's worth of interactions to get some build-up for them. And Kubo himself said he hates romance, so he'd definitely half-ass it, to say the least, if not outright off-screen shit.

It's better those two ships remained fanon ones. Kubo's own two endgames weren't well-written, so I doubt he would suddenly be better with those two, and especially the latter. Their existence is still very fucked up since all the losing hollows continue to exist in a semi-dormant state. There's some glimpses of that with Aaroniero making random hollows bubble up in his body and Lilynette splitting off from Stark (or the other way around).

I didn't say that, I actually did the exact opposite by bringing up fights and power relationships relative between characters and captains/confirmed "captain class" characters.
To say it's explaining away or something is silly, especially since the point of view we experience the story through, Ichigo, proves the point that the idea of "captain class" is extremely nebulous. He beats Ikkaku and Kenpachi, 2 characters who are a captain and another who is directly after this arc stated to be captain level. So, Ichigo is captain level before Bankai training, but then when he confronts Byakuya for the first time, the best he's able to do is block 1 hit then gets bailed out by Yoruichi who told him in no uncertain terms that he'd have 0 shot at beating Byakuya.
Literally in the arc that introduces captains, there is shown to be a power gap in captains. And after that the same weak captain beaten by shikai Ichigo beats 2 other captains at once. You might argue that Ikkaku could have beaten Ichigo if he used his Bankai but considered Ryumon Hozukimaru is worthless, it's arguable but Kenpachi was a straight win.

This is mostly true though. Aizen only got I think 6 or 7 Vasto Lorde. And keep in mind Aizen only lost because 2 high class captains, thought to be dead, showed up, along with the Visored who also consists of 4 captains, and Ichigo getting random Dangai training and the Mugetsu form. I don't think it's unreasonable to think that if Aizen had even stronger Espada he would have won, especially without 6 captains and 4 lieutenants that Toshiro didn't even know about.

Harribel forced Hitsugaya to use his bankai, and wasn't even using her full strength (as she was saving it to fight Yamamoto later and take her time creating water). The most that Hitsugaya did was freeze her, which didn't even injure her whatsoever. She lost because Aizen struck her down (with two attacks, rather than one as he did with the other captains)

Who wins and loses most of the FKT fights doesn't really matter, because Aizen already reached his goal of fusing with the Hogyoku. I still do understand why they happen, generally being for fleshing out characters, but still, the ideal would be that these things happen at the same time because of the same event.

ichigo vs dordoni was also a very good fight when I think about it. On first watch it made me care about dordoni despite his screentime being limited.
