I think corpos just got too big and these are commands going downwards. They hire animators but say "we don't want the show to be too animated and to distract from the dialogue". They want a show that has people standing around flapping their gums, rather than something "animated". Same in live action. They don't want anything dynamic they want something shot fast and produced fast and isn't confusing or distracting for viewers.
I think the widescreen format is utilized in a very lazy cookie cutter way of having the entire screen filled at once rather than using any kind of interesting staging or framing, simply to save time, make it easier to produce. You barely need to storyboard anything.
