Warior is a good job to start with and always useful to have leveled, race whatever you like the look of, whichever nation you think looks coolest. You get a bonus level 1 ring for starting Hume or Galka in Bastok, Elvaan in Sandoria, Tarutaru or Mithra in Windurst but it's not important. Sandoria probably has the simplest layouts of the 3 starter nations, Bastok is pretty practical, and Windurst can be kind of confusing for newcomers because it's rather big.
