sekiro not only allows but rewards you for trying to be aggressive after every single block, similarly the act of perfect blocking in and of itself is aggressive because its doing poise damage to the boss
they know how popular that gameplay is because they added it in whole to nightreign AND the dlc with the samurai and deflect hard tear, and they resulted in way more engaging gameplay and gave the players brand new effective tools they can use against bosses (coincidentally these cant be input read against so the main tactic of the game is now way less effective)
sekiro has so much more interesting of a combat system than elden ring or dark souls 3 has, and it literally only has one single weapon. blocking, jumping, dodging, and mikiri countering have so much more nuance than, "he's attacking you 18 times in a row so spam roll"
you cant even reliably use the jump in elden ring defensively because enemies have no distinction for jumpable attacks and they are defined literally at random. sometimes you can jump sweeps
