In Tarkov, the way to fight scavs(NPC enemies) is to expose your entire body to them. The AI in the game aims at the portion of your body that is exposed, so if you peek around corners like any other FPS game, the NPCs will, without fail, turn around and headshot you with nearly 100% efficiency if you do not immediately kill them.

Against players, unless you are using extremely rare and expensive ammunition(which is most people and most of the time), the meta was to spray the legs of players. Forget aiming for head and torso, because those areas have shielding. But the legs, you can't get any protection for there, so the most reliable way to kill a player was to spray the legs.
