I think it's more aging and physiology. For example after 30-35 humans are generally unable to form new musical preferences. We also have a tendency to remember the best parts of the past and humans usually achieve their physical peak in their youth so it's all a road downhill from there. This causes a strong attachment to a culture of their youth and what you call being "hopelessly stuck with what they were raised in".

An immortal being in peak physical condition may as well stay hip and adapt to the times - we simply don't have any samples to look at.
