It's heavily location dependent. We have farm stands around here that are self service. They often have a cash box where you can make change. No one steals from the farm stands even though it would be easy to get both free stuff and the box full of money. Half an hour drive away in town you can't leave even worthless junk in your truck bed without risking someone stealing it just to steal.
