I wish "Dungeons & Dragons" had you fight more creatures than Dragon 90% of the time.

but having mini dragons pest, shepherding dragon, swamp dragon, tree dragon, mimic dragon, swimming dragon, wooly dragons, jeloo-cube dragon....etc
Well, it doesn't make for impressive adversaries.

I think we should make dragons something that's frightening and almost most dangerous creature you will ever fight.
Make them gigantic in size, capable of flight, breathing fire, heavily armored, smart and capable of casting spells, even sapient smart, with centuries of memories, like true talking boss character.

It would kinda look like pic, the dragon would be like holding the Princess as small as a puppet to him.
They would love capturing princesses, hoard plenty of gold and you'd rescue both from him.
