the whole "stainless is never good" hasn't been true for ages. but i'm not going to recommend some expensive supersteel knife to you, instead for your purposes get a victorinox folding vegetable knife in plain edge (not serrated edge). Or get two straight away, they're inexpensive and very light.
Victorinox steel is decent enough (1.4110), and easily resharpened, so you're also gonna buy a Worksharp Precision Adjust to keep them sharp.
