Watermelon can vary wildly, I used to think they were bland too, but I was just shit at picking out the sweet/flavorful ones, you have to know what to look for to pick the best ones. Takes awhile to get good as weighing the various factors to be able to pick out a good watermelon, you won't usually find a perfect watermelon that exhibits all the best traits at once so you have to know which are most important.
I go by webbing/spot > weight/roundness > dullness so first I try to find the melons with the most webbing and the most colorful field spot, that usually eliminates like half of them as you can instantly tell at a glance which will be flavorless watery shit as they have next to no webbing or their field spot is pale, once I've separated out all the pale spots and no webbing from there I try to pick the heaviest/roundest melon of them (most time consuming part picking up each melon and feeling for weight, a good melon should feel quite weighty) setting aside the heaviest (and typically also most round ones, weight and roundness usually go hand-in-hand, but not always) ones, if there are any melons left at this point I try to pick out the one with the dullest rind.
