Though Frieren never once played with Himmel's feelings, she just didn't get it, and while his gestures were very obviously romantic, he never openly said "I love you". You have to understand, you have to treat Frieren as if she's the most autistic girl in the universe. She just didn't *get* love. She knew what it was, and later when thinking about it she realizes she'd have liked to share it with Himmel (and this still takes her a while and retracing their steps to remember all those romantic moments), but at no point did she ever feel like she needed love or that someone was in love with her, and skipping out on Himmel's entire life was an accident. She just says "Yeah, I'm gonna go do some stuff, I'll be back" and goes missing for 50 years, and when she comes back she can't even process immediately that "suddenly" Himmel is a fucking elderly man that dies like a week later.

Even during the funeral itself other characters remark that she's not emoting at all, until they start actually burying his body and then the waterfalls break out all of a sudden because her brain finally caught up with the fact she had accidentally missed his whole life.
