Larger swords with the most rounded movesets (Claymore, Zweihander, Fire Knight's Greatsword). Once you start staggering pretty much every mob and boss, you can't go back.
Whips, scythes, great spears, halberds, twinblades, light greatswords, and the smithscript weapons are all fun as well.
