I'm claymore+greatshield atm and those can be done on the horse. For fat indoor bosses, turtling behind a shield still works as long as you roll out of their grabs and overhead/bottom-up attacks.

Cold Flamberge + Spinning Gravity Thrust
Gets good Dex/Int scaling for sorcerers, procs Frostbite and Bleed fast, gives you crazy hyper armor, bugs most enemy AI out because you're moving around like a spastic hornet.
I love the look of the Crossed Naginata, but if you're not being an asshole that just runs around doing the poke and fleeing, the moveset is too slow compared to other spears to be worth it imo. Its like half the speed of every other spear without doing way better damage. I want to one day make it good, for real.

Before the DLC it was the fist and claw weapons. I was so stoked I used them all. Sadly I ended up killing the Elden Beast with the Rykard sword because by that point I was so frustrated with the shitty hitbox and weak moveset. In hindsight I should've stuck to my guns and punched that space blob to death with my spiked knuckles.
After the DLC it's the footwork martial arts. It's amazing and I've wanted that in the game since before it even released. DS3 had a pair of molten fists that had a cool moveset and I hoped they would transplant it but sadly they didn't.

Glintstone Kris scales well with DEX, so does Milady or the Moonveil, you also get access to good scaling for some pure DEX things like the Claws of Night.
DEX is the ideal sub stat for casters outside of STR/FTH builds, especially since again, it scales your casting speed as well and that makes a huge different as the vast majority of spells shaves 1 frame off the casting animation ever 2-3 points in DEX.

Sorceries have higher DPS but generally are less flexible and look pretty samey.
Incantations have way more diversity, but you're probably going to give up DPS.
Sorceries tend to have a pretty linear game progression where you just find better gear and spells that are linear upgrades to what came before in an obvious manner. And the stat requirements can get very high.
Incantations tend to be more open where most have fairly low requirements but you are incentivized to specialize in a certain branch by the late game.

The easiest build to rape the game with is STR/ARC with dual heavy melee weapons infused with Bleed.

Big chunk damage that breaks enemy poise, so you can play sloppier and get away with it.
Frostbite is stronger if you do lots of damage as it debuffs enemy defense. Rot does great free damage over time. But both require higher skill to get the most out of. Triggering Rot when you aren't going to live long enough to see it do its magic is pointless.

Throw on the Greatshield talisman as well for good measure. Outside of full blown greatshield turtle poking setup, you still want to dodge and only really use the shield to proc the guard counter. You want a weapon that has a good guard counter animation that’s either fast or a poke. Guard counters do solid stance damage so you want your weapon ash to do solid stance damage on demand so you proc stance breaks quicker. Ideally you’ll want good crit damage to maximize the stance break opening.
Lordsworn straight sword with square off is basically the baseline for this playstyle, if that doesn’t feel good it’s probably not for you.

I like Knight's Greatsword. It shares a moveset with Lucatiel's Mirrah Hollowslayer Greatsword from Dark Souls 2 and 3, and has a nice choice of Ashes of War you can use with it.
I start every playthrough getting it from one of the knights in north Limgrave.

Agree. I didn't have a great experience with whips in the earlygame of DS3 so I wrote them off until I grabbed the tooth whip for my dullahan cosplay this past run and found it was a great complement for the rotten greataxe.

I used the great club and pretty much walked over the game. Its R2 is about as fast as a sword yet does stamina damage of a great hammer. With Mohg in particularly I used it and a troll hammer and just jump mashing L1, killing him before he did "Niheil"
