Because in the ancient past the surface of the earth was much more volatile and covered in organic compounds. Also you don't understand what organic matter is, it isn't life but hydrocarbon molecules and proteins. Sugar, acetone, vinegar, ethanol, propane, gasoline, and glycerol are all organic matter and we can see them in DNA structure e.g. ribose sugar chains forming the spines of the double helix. It's likely life arose from a rea8kdg0ction of complex hydrocarbons that became self replicating in huge pools of these molecules billions of years ago and slowly built from there, which is why we see unique organic compounds maintained across lifeforms instead of being novel for each lifeform (like the porphyrin structure of haems in blood cells being the same as the chlorophyll producers in plant leaves). Atheism/agnosticism is true but religion is necessary. If God exists nothing we see in our world was actually created directly by him but simply set in motion by him, it just emerged through chance.
