I feel this way about all gacha games and WuWa is certainly no exception - that the progression wall of endgame is completely an illusion and 90% of the content in the game doesn't require you to optimize your characters at all. And then even when you do, endgame rewards you with what, a handful of pulls every couple of weeks? It's hardly with the time investment.
But I still enjoy doing it, I feel like it's the closest thing these games have to 'a point.'

Yeah, each patch adds about 10-15 hours of content. And you're allowed to play those as much as you like, but when it comes to progressing your characters you're artificially limited for some reason.
I spent like 6 hours a day playing OSRS these days (albeit often in the background) and I've done a similar amount of grinding in WoW. I'm no stranger to grind. I suppose I understand the way you feel about digital achievement and I even share you outlook to a degree, but I still like doing it.
