"They" is plural. It refers to more than one thing. Correct third person pronouns would be "it" or "he", with "she" being correct if all possible iterations were female. Discussing someone changing oil would be "he", even though women change oil. Discussing someone changing a tampon would be "she".

You can find a million examples of people getting it wrong, but in each and every case it is an act of political activism.
