Reboot the trilogy.
Keep (pre-)CE aesthetics consistent throughout the games. The tone can change as the story progresses, but designs generally shouldn't.
Mix in some gameplay elements of classic shooters like Unreal or Quake, but keep vehicles highly advantageous and Chief feeling like a walking tank. A little extra movement speed (not sprinting) and increasing the weapon limit to 4 could freshen things up without making things too different. Powerups should appear throughout the games.
Keep the covenant and their motives mysterious for longer. When eventually revealing them, do so from humanity's perspective instead of doing the whole sudden Arbiter thing. This allows room for speculation and misinterpretations which can be interesting.
Focus on a mix of exploring Forerunner facilities (mostly on Halos, obviously) for technological advantages, and trying to set back the Covenant with strategic battles.
Don't do anything with the Chief after a 3rd game. Spinoffs should generally not interact with the main story. No books or other multi-media nonsense for lorefags to get out of shape over.
