Essentially you only need to do each one once, but if you want the triple crown affinity boosts you can rerun the races, but that's just for increasing affinity between legacies so not as important

And yes as this anon points out, winning a set of races like the triple crown races will give you an extra affinity bonus for breeding. This higher affinity means you can get that double circle affinity easier which leads to increased chances of "gold" inspiration events and other things.

Lastly you can plan out your parents to guarantee good affinity using the affinity calculator. Seems overwhelming? Then dont worry about it too much right now.

Once you do get a grasp on it though, you will have a lot more control over your luck and just have more consistent runs in general, even if your deck is lacking.
