Doesn't really matter. There's a couple years of foxbody mustang that came with forged internals if that matters, but any year roller is fine. If you're keeping EFI, I think the explorer intakes had better flow. Someone will correct me. If you're keeping the iron heads, GT40 and GT40P heads flow the best. You can look up how to identify those and if you want the P ones. I think the spark plug angle makes changing spark plugs suck on some cars with the Ps.
I like Summit, Jegs, and Speedway motors. CJ Pony parts does mustang stuff. Speedmaster makes cheap aluminum heads, and smallblock MOPAR guys say they're good to go. You'll have to check the forums to see if their smallblock Ford castings are as well.
There are tons of recipes for the small block Ford that you can find around. Also, BigTime on youtube just started building a foxbody. It's worth watching, but it doesn't get too technical.
