Your brain is wired to reward you for providing it with things that are rare in nature, your pleasure centers still think you're a hunter gatherer foraging for enough energy to make it through the day. It wants stuff like salt, fats and sugar. When you eat a cheeseburger combo meal with a large milkshake on the side your brain thinks you had an incredibly successful hunt today and rewards you by releasing happy chemicals. It hasn't had time to evolve to this new 'agrarian lifestyle' thing, or this even newer 'industrial revolution' thing. It adapts to changes on the scale of 10s of thousands of years. It doesnt realize we can get all the salt, sugar, and fat we could ever want in a single chocolate bar for less than an hours work. When you eat normal food again its like, "where did all that easy fat, salt, and sugar go?" When you stop giving it tons of this stuff for long enough it will eventually reconfigure and start to reward you again and this time for a reasonable portion. But know you can easily fall off the wagon if you start giving it tons of fat and sugar again, its always eager to reward you for giving it lots if fats, salt, and sugar. Processed foods are absolutely stuffed with this stuff and keeps you addicted.
