They use skulls over marbled bodies as icons of worship both as a symbol of the emperors sacrifice but also because even at it's very core(skull)humanity is superior. My head canon though is that the skull worship is the emperors own homage to his dead father. In his tribe you were supposed to decorate the skull of a loved one and I like to think Big E decided to decorate his fathers skull with the very stars themselves by spreading his imperium.
