I'm honestly not a good person to get advice from on this. I usually spend a day or two set dressing and editing models, and then chickening out of making the animation. Right now I'm doing daily-ish quick practices. This is usually where I take a webm and use it as reference and animate using models I won't get attached to. Either trying to match the reference or just using it to gauge timing.
My workflow is honestly shit and I haven't managed to finish anything new for a while, so I can't give any advice on that.
Take anything I say with a grain of salt, I usually trial and error my way into getting things done.
For the Sam animation, that's caught my neuron, so it'll be a while before it's done, but that's definitely on the list.
