Honestly they make building for me way less annoying. I have the same issue with overdoing it with a knife, particularly on backpacks and head. I use 600grit for big nubs and resin, 800-1000 for mouldlines, and 1200 for smoothing glue overspill, or smoothing out areas you've gapfilled. Also little cheat to make them last longer. Pick up a tub of cyberclean from best buy. It's a little tub of green slime used to pull crumbs out of computer keyboards, and it'll also pull the majority of plastic dust from a sanding stick so they'll last you way longer.
