Do you want it to taste(?) like shrimp or not? Are you saying you preferred this "beef-like" stringiness or not? None of it made sense to me really. You don't want it to be chewy so that's why I cooked it gently like I did. Paella is tricky because you have to add things in a certain order, and shrimp would definitely be last. Maybe mussels because they just have to open. But you have to serve it immediately. Most paella shrimp I've had is overcooked and it seems like you enjoy it that way. If not, just cook it less.
