Fact is, if you obsess over staying shredded 24/7 365, you'll never get anywhere and your lifts will remain novice or intermediate at best forever. Like, how many people do you know who have been going to the gym for years yet they're still not even at fucking 1/2/3/4? Most of this board can't even lift that much
You just have to bulk, and accept that you might not look your best for a couple months. Who cares if you're a bit fat over winter anyway? That's unironically how you make it, then you cut down and keep all the strength and muscle while getting lean.
