to take the OP image as an example: inventory UIs. why are they bad? anyone on a non-censored part of the internet can instantly tell you why: because modern games have to cater to 80-IQ brown people who play on consoles, so the UI has to be extremely simple, bubbly, colorful and retard-proof, like a child's toy with rounded edges. it cannot densely convey useful information and allow the player to efficiently do anything. because it must cater to the brown subhumans. that's the actual reason the UI sucks. not whatever timothy cane the geriatric faggot says in his safe little advertiser-approved video.
