Upon rewatch I think The Longest Bitchyard is the best season 2 episode. Visually it's fantastic, the best rendition of the characters across both the shows with the rounder and softer designs, and the animation is equally as impressive throughout with constant full body movement, old school rubberhose animation and full tridimensionality of the bodies during the sport scenes. Conceptually it's genius in how it parodies prison movies with the idea of a prison ghost that thrives on making the characters act bad, and in how that is the direct driving force of the narrative with the constant meddling from the ghost (that becomes more obvious upon rewatch) and the catalyst for the character development when he ticks them off and they decide to prove him wrong. And the execution is perfect across the board, the pacing may be the best in the season and the way the final match synchronizes the action and the takedown of the ghost with the characters refuting his assertions is flawless.
