Canonically, GV is kudos maxing, so he's probably making his opponents outside of Nova, Zonda, Zed, and Kirin look like chumps. He doesn't have to kill either, it's a choice. His powers work equally well either lethally or nonlethally, it's his will that determines if they're just going to knockout the other guy or kill them. Saying that, his enemies, even in GV3, probably didn't deserve mercy. Even Gibril, for all her "good" qualities in the extra material and as young as she is, did some evil as fuck acts in GV2 and is extremely dangerous.

Canonically, they're extremely brutal. People losing limbs, getting holes blown through them, etc. Merak got bisected in the ova. GV turned a guy into giblets in one of the light novelettes. Also, some stuff of Gunvolt coming home drenched in the blood of his enemies.
