Soulslop isn't bad because it's hard, it's bad because the formula devolved into a rhythm game. Guess when the boss is actually gonna deal damage, and press the invincibility button exactly when they deal damage, then counterattack. If you guess wrong too many times you have to start over. In a well designed difficult game, you have more things to think about and more ways to play than mindlessly pressing roll/block/parry at a particular moment.
