>Is there a simple way to "downgrade"?
You will have to create a USB installer to do a clean install. Preferably of W10 IoT LTSC 2021 specifically, as it's the version of W10 that will get security updates for the longest (until 2032)
Simple clean install guide (you can skip the "Back up your data" part if you don't care about what's on the drive):

LTSC ISOs (if you want a language other than English, don't worry, you can install a regular LTSC of your choice and make it IoT after the install):

MAS, which you will have to use to activate (and change to IoT beforehand if you have to):

Windows sometimes doesn't get all necessary drivers by itself, especially on laptops. You can use SDIO which will get every driver for your hardware automatically:

SDIO instructions if you have to use it:
>start SDIO_x64
>select "Download Indexes Only"
>wait about 30 seconds for the indexes to download and the list of drivers to appear
>in the red box on the left side, click on "Select all", then "Install"
