It's the Nitrites/Nitrates. As others have pointed out, it's banned in the EU but SUPER prevalent in US foods, and has been known for some time to cause colon cancers. There are several brands without it, but I don't expect the nigger cattle here to be able to read the labels.

Oh, and for 2 people who can actually read, they put this stuff in all kinds of preserved meat, since it's slightly cheaper than salt and gives the meat a pinkish color, so watch out and read EVERY SINGLE LABEL.
