Cured and salted foods were always boiled to remove the curing agents before eating, particularly before refrigerators.
Normalize boiling salted foods and you won't have so many cancer cases.
Nitrates/nitrotes are also highly water soluble; boiling helps remove them much more easily.
Boiling also renders the fat from the meat; you could stand to lose a few pounds eating leaner foods.
