What's funny is that New Mexico and West Texas actually do have a bit of a "Southwestern Mexican Food" thing going on that, in at least some respects, is distinct from the Tex-Mex in the rest of Texas.
Pic related, stacked enchiladas are a very Southwestern Mex thing, as is the use of blue corn for tortillas and chips. Also, lots more use of chiles, especially hatch chiles when they're in season.
It's not even like this is some secret club thing. Chuy's as a chain does a number of Southwestern Mex dishes. So it's surprising to me that apparently none of this has made it to Arizona, considering, you know, Arizona's in the Southwest, too.
