I had excellent Mexican food at Javiers in Vegas. I also had surpringly delicious tortilla soup at silly Guy Fieri's Burro Borracho along with some delicious salsa, guac and chips. I also had some delicious mexican food in the South Rim Grand Canyon in the vilage at items on menus (AZ). Breakfast was lovely one day, chilaquiles and fresh pastries. I just think you need to research your options. Also, is that a crunchy corn taco pictured? Geesh, kids plate or amateur. You're not even ordering like a mexican.

Anon, Mexican slop is the same where ever you go. They're not even creative enough to create a different side dish. Always the same canned sloppy beans and dried rice. The main dishes are essentially the same, just placed in a different vessel.

Mexican food is shit. It's all a variation of the sane ingredients: a bunch of minced pork with onions and cilantro, sitting on a cheap-ass corn flour pancake, covered with the shittiest most plastic cheese ever, and topped with some hot sauce that masks the taste of the whole thing.

Most real cuisine from over 100 years ago is high calorie and decent nutrition. The problem isn't the food, but that the peasants, ranch hands, and farmers, that used to eat it burned a ton of calories per day.
Now people are far more sedentary so the same food turns them into a blob.

Mexico was agrarian and you still rode buses with chickens and goats in the 1980s. People were not fat. Now that it mimics a poorer united states in many regions they get fat.

Real field workers also limit their food intake and watch their weight because they know they struggle to work otherwise.

It is weird, Arizona serves essentially God awful Midwestern chain "Tex-Mex" instead of just doing what New Mexico and Texan border towns do and just serving what is more or less Norteño food.
Awful Tex-Mex in particular is bizarre since if you go to Houston or San Antonio you'll realize Tex-Mex is quite good, even if it's not really Mexican food. So it's just utterly bizarre that other parts of the US can't do it right.
The way to find good Mexican food in 99% of the US is to look for places that advertise themselves as making a specific regional Mexican cuisine. At the very least, you'll get something that recognizably looks like Mexican food instead of whatever unhinged slop is your picture.

Take those three chilis, but not too much chili powder isn't supposed to be too spicy.
Add onion powder, garlic powder, oregano and a little paprika.
Toast in a pan, to smoken the chillis.
Make a chili powder of this, not too spicy, just a little. It will be a bit spicier because of jalas and guajillos.

Now, you brown onions and add beef and brown beef with salt and black pepper. Add diced bell pepper, red and green.

Add tomato paste, about 2-3 tablespoons. Add a 14 oz can of tomato chunks.
Add 3-6 tablespoons of your chili powder. Start with 3 but taste as you go and go up.

You want to add a bit of beef stock and a sweeter red wine.
Lots of chilis aren't sweet but the best ones must be sweet so a little sugar, the maple syrup or brown sugar is the best move. Don't add too much, you want it to be consciously sweet but not more than that.

Some people finish with a bit of Worcester sauce, or if you prefer, ponzu.

Oh, oops, after the tomato stuff add red kidney and pinto beans.

What's funny is that New Mexico and West Texas actually do have a bit of a "Southwestern Mexican Food" thing going on that, in at least some respects, is distinct from the Tex-Mex in the rest of Texas.

Pic related, stacked enchiladas are a very Southwestern Mex thing, as is the use of blue corn for tortillas and chips. Also, lots more use of chiles, especially hatch chiles when they're in season.

It's not even like this is some secret club thing. Chuy's as a chain does a number of Southwestern Mex dishes. So it's surprising to me that apparently none of this has made it to Arizona, considering, you know, Arizona's in the Southwest, too.

What you want to do is go to a place that specifically advertises Sonoran food, that's the good stuff (especially carne seca, which is like shredded beef jerky rehydrated in sauce and used as a filling for stuff)
