Much finer tuned control over aspects of your actual animation frames. This was emphasized because it is a proper stealth game, it was intentional. Perhaps not entirely realistic, yet it's also necessary. Probably something a modern animator cannot figure out how to make work properly. I hope I'm wrong that the remake will have been able to translate this into a modern engine.
