Rudolf's career is hard to adapt to anime since she was legit too fucking good, you'd need to focus on other stuff besides racing because for almost every single race her victory is a foregone conclusion. You could still do it, there's plenty of OP MC battle shounen and isekai shit where MC has 999 stats and one shots every fight trivially, but most Uma animes are trying to be proper "sports anime".

Even the couple races Rudolf didn't win she was still 2nd or 3rd. Her career is better suited to being a couple episode arc in somebody else's story, or maybe a movie. A multiple-season anime where 95% of episodes end with "and then Rudolf curb stomped everybody" would get old if not done well.
