They are better because they don’t speedrun and already rushed story like the anime did and don’t take the retarded liberties as well like that horrible rendition of Legend of Dracula.
Though neither fix the core issues that FGO did. Apocrypha is still rightfully criticized for shafting the vast majority of its cashed. Which Higashide went lengths to develop in response in FGO.
I can’t properly rate because the damn novel wasn’t ever fully translated so I had to use MTL to read it, but I’d say the LN has a bit better worldbuilding while the Manga itself is more consistent.
The Novel has some signs of retcons if you ask me. Early stuff becomes senseless later like Mordred having heavy drawbacks from Clarent Blood Arthur she never displays again, the No Assassin rule being originally the equivalent of a switch that Darnic turned off (later the explanation is that they circumvented the “Assassin Word being a Catalyst” by changing the chant and bringing a different catalyst), Sieg going from perfectly replicating Siegfried’s power (but being out of sync) to actually causing Balmung to be worse because it changes traits on the wielder etc.
The manga felt more polished most of the time though it had its hiccups here and there.
