The Belgariad series by David Eddings. Fairly entry level fantasy, but cool worldbuilding and neat concept of magic.
The Farseer Trilogy by Robin Hobb; darker style of fantasy than LOTR, but with great character building (flaws and all) and again, very cool magic concepts.
Magician by Raymond Feist. (and the two sequels, plus the Empire trilogy with Janny Wurts). Again, great worldbuilding and interesting characters; a lot of stuff cobbled together from Tolkien and real-world history (race of invaders are basically Edo-Japan era warriors), but big in scope and there's almost 3 dozen books in the whole series if you want to go balls deep on them.
image is mostly for banter, but a lot of the titles are genuinely good.
