Because a good tsundere is all about contrast. Contrast in how they treat you normally vs how they treat you when they're embarrassed, contrast in how they treat you vs people they don't like, and contrast in how they treat you initially vs how they treat you when they're truly in love and in mostly dere mode.
Honestly, I feel like nowadays, most people forget that and think tsunderes are just bitchy girls who're abusive to men, but a good tsundere makes you feel special, makes you feel like you see a part of them no one else gets to, and makes you feel like you really won something special by sticking with her when you crack her shell. At least that's how I see tsunderes as a lover of them.
