The low profile board I started with is a Keebio Iris CE, I bought it as a kit and added my own switches which totaled up to $260, but putting it together was super easy because everything is ready to go with hotswap and its already flashed with QMK/VIA. Next I built a Dactyl from the dude above (who helped me out with a bunch of stupid questions), which totaled up to $155 with switches I got on amazon, but I did choose to build it myself to save money. I already had a 3d printer and soldering iron to work with. Dactyl is really nice, I like having more keys to work with and the keywells are super comfy. If you wanted to just test out if you even like splits there are some super cheap ones on aliexpress, but I can't personally speak on the quality of them.
