Any chances I can find in this budget:
-a 104-key hotswap base that'll have standard Num/Caps/Scroll LED's, NKRO, QMK/VIA
-a good set of tactile switches (I'm on MX Browns so ig anything will do but I'd like to go nice not super cheap)
-a set of Cherry/OEM profile WoB keycaps that stays true to Model M legends and doesn't experiment with crap like numpad division/multiply keys
Ideally I'd avoid 108-key bases even if I'd like the extra macro keys due to making the status LED's a bit trickier to add, needing an RGB backlight base and having to look for windowed top row profile keycaps and those are hard to find due to being niche.

Partly it's because the dactyl isn't exactly a standard board, and being programmable means there are a lot of different keymaps for it. So it's impossible to cover everything with a set with legends.

Not really a concern. Most likely if it has a backlight I'll just set it to solid white or blue at low intensity.
I don't really need fancy stuff like QMK or hot-swap switches. I don't even really want something wireless, I'd prefer if it was wired. I just want something that is simple, looks nice, has a metal frame, and will last a long time. It'll be replacing an old DK4 Pro that I love, but am repurposing.

Pic related have been a great experience. I actually own both, but I'm back to using the Raise 2 (I had an original Raise years ago) as I've not quite gotten used to the columnar layout of the Deft or its closest relative the Moonlander. Raise2 also lets you just plain use the thing as a single board connected together if you wish to get used to learning to type split if you've never done so before.
Both the Defy and Raise2 I got with all the optional upgrades - wireless (bluetooth and 2.4ghz both. Wired remains an option too), tenting (a pretty comprehensive solution with lots of options for stability), and underbody lighting (backlighting is standard on the keys, underlighting is the least necessary feature but it can still be pretty useful as there are like 16 zones or something on each side. I've used them for layer indication, temperature or other metrics on hardware etc), and the native Linux support for the config shit and firmware is nice too. They seem to keep it updated with reasonable frequency and new features etc. Raise2 has some little expansion ector that can be used for additional upgrades kinda like the UHK; none are official yet but some user created mods are neat.

If I had some idea of a keyboard that would fit your requirements I would have replied with it. When you get nothing but a dismissive reply it's because nobody can think of one.
I can think of keyboards that almost fit these requirements, but:
- 108-key is way more popular than 104, and the handful of 104-key boards I can think of mostly aren't QMK/VIA
- tactile switch offerings are unusual, and you don't have the budget to replace the switches
I have spent a lot of time searching for nearly identical requests. Maybe I'm just forgetting or missing something, but I'm sorry, I have come up empty-handed. 104-key is not "bog standard" in mechanical keyboard world, though I wish it were.

In which case 108 is the next best bet. Like I said, option #2 would be a 108-key base with south facing RGB backlighting and QMK/VIA. I turn off the backlight except for the three of the four macro keys, assigning them to status LED's. Then the issue becomes finding three 1u R1 window keycaps like picrel, as well as one blank 1u R1 keycap since in my experience they're borderline impossible to find on Ali.
Another option would be windowed keycaps for Caps Lock, Num Lock and Scroll Lock, but there's like only two of those and they'll be inconsistent with every keycap set so I think the macro key route is the saner one.
I can only assume that there's no way in hell I'll be able to complete an entire set of base+switches+keycaps within this budget, and getting a pre-assembled keyboard, then trying to unfuck it with keycaps is wasteful, so let's say that the budget bracket for the whole DIY set is $190-300. What would be my options then? Also, are the Holy Pandas or whatever still the meme meta of tactile switches or is there something else worth looking into?

I'm not the one to ask, I prefer MX Browns over all that ultra-tactile bullshit. As far as I know the meme is still the Gazzew Boba U4T, manufactured by Outemu, which surpassed the Holy Panda a while ago.
The good news is there is a keycap set which meets your requirements, but not for 108. So if there's a suitable 104 out there it might all work.

The one that I despise for having the Win/Mac LED's that you cannot reprogram and no Scroll Lock LED. Fuck Keychron I hope they choke on Tim Cook's cock. They do not have a single board that would fit the bill. Except the Q6 if I were to find those windowed keycaps and a sane set of WoB keycaps, but again, at that point it would be better to just pay 3 times of what I'm aiming for and get a DIY base, swtiches and keycaps all separately.

Like I said, the biggest issue with 108 is the lack of keycaps, and the fact that they pretty much never get dedicated status LED's. I don't have much problem with four programmable macro keys, I'd probably assign them to F20-F24 and use with AutoHotkey, or not use them at all. 104 with classic status LED's would be more preferred as that alleviates a lot of my woes regarding keycap sourcing.

You will have to solder the switches to the PCB, and if you want the indicators to work you'll have to buy the LEDs for that (they're cheap and soldering them is pretty simple). It's an unknown. I don't think it's QMK programmable. Most of the people who've bought them are in Asia so I haven't heard much about them, though I've wondered about it before. It's stuffed full of foam so you'd have to remove some of that for it to sound acceptable with clicky switches.

The "feel" is from the mould, it is not an innate property of the plastic. The only thing really different about ABS and PBT is that they present different challenges in manufacturing, ABS wears faster, and ABS yellows over time (especially with sun exposure).

I bought this exact keyboard and it disconnects everytime i reset my pc, it's annoying as hell. I have to re-plug it in for windows to recognise it. I'm sure its on my end but its annoying
I only have 1 mechanical keyboard but i can say it feels like decent quality, its quite heavy but looks really crisp. I got the noisy switches so its sounds good aswell. Only downside outside the disconnecting is that it sits a little high compared to my old keyboard but maybe thats every mechanical keyboard idk. The spacebar is probably 5mm higher than my old keyboard

Some keyboards are shallower than others; but it's true that there's a sort of minimum height you can achieve while using Cherry MX switches. Still, a properly low front height is a nice feeling and some boards do it better.

This one's a little over your budget and I don't like that it's hotswap, but it mostly fits the bill: 8k polling, nkro, cheap, full-size. I'd get browns or reds for the switches, browns will be closer to what you're familiar with since they're a little bit tactile. Avoid bananas, if they're anything like the gateron jupiter bananas they may have switch bounce problems.
I'm not very familiar with the low-end market

There were some full-size boards over the past year, just none right now. Bowl Pangea. Vertex Intro S100. Vertex Seal. And that's not counting things like the Class 1800, which did have just as many keys as a regular full-size.
There's also boards like the Zoom98 which come very close to full-size.

the LED is separate from the switch, you desolder and remove it first then change out the switch, finally you reinsert and resolder the LED. I've done this myself on the numlock on my Brutal V2 1800, it's pretty straightforward

I noticed the LED is separate from the switch, what I was just worried about is whether or not on some of these older keyboards using SMD LEDs that go through those older Cherry MX switches will let me resolder them if I use any other switch without just straight up getting aftermarket sockets or something crap that I haven't learned about yet. Especially since this is not an RGB keyboard, single light only. It uses 3mm LEDs I think. The cherry switches are not like the modern type that have LEDs bult in, the LEDs are wired though holes in the switches to the PCB inside. I don't know if I can just grab off the shelf Cherry switches from today or Gateron switches and just replace them because of that.

I'm not sure what you mean by "the modern type". This is the newest Cherry MX2A line of switches and you can see the through-holes for inserting a separate LED.

Many switches will have this hole, which is standard. The only ones that won't will be switches that have a light diffuser for channeling light from LEDs on the PCB upwards, or which for reasons unknown simply close off the front of the switch (e.g. Gateron Type R). These are very easy to see in switch pictures, so just look carefully before buying. E.g. it's easy to tell that a Gateron Quinn would work fine, but a Gateron Baby Kangaroo would not.

I figured that they didn't make switches with that kind of cutout for SMD LEDs anymore, but if that's still the case then that is good. It's just that I see keyboards with switches like pic related (what I'm trying to figure out if it would be compatible or not should I resolder these old Cherry MX switches in addition to current Cherry switches) these days in stores and they don't have "bulbs" for LEDs like on these older keyboards. So I'm guessing that there must be some distinction between RGB and non-RGB LED and non-LED switches.

I've never seen a formal designation but you can tell by glancing at them that some have through-holes and some have diffusers.
The through-hole with an LED produces a superior light for indicators and such, so many enthusiast boards still do LEDs this way and I don't expect that to change; but RGB boards with LEDs on the PCB are very common, so diffusers are common also, especially on meme switches aimed at lowest-common-denominator buyers.
In short, there are many options for both styles and neither one is rare. The diffuser will make it impossible to install your LED, so don't use those switches on any key where you need an LED.

The low profile board I started with is a Keebio Iris CE, I bought it as a kit and added my own switches which totaled up to $260, but putting it together was super easy because everything is ready to go with hotswap and its already flashed with QMK/VIA. Next I built a Dactyl from the dude above (who helped me out with a bunch of stupid questions), which totaled up to $155 with switches I got on amazon, but I did choose to build it myself to save money. I already had a 3d printer and soldering iron to work with. Dactyl is really nice, I like having more keys to work with and the keywells are super comfy. If you wanted to just test out if you even like splits there are some super cheap ones on aliexpress, but I can't personally speak on the quality of them.

I only used the led sockets because the pcb uses bipolar 3mm. Depending on the switches you can replace the 3mm led with a better fitting 2x3x4mm led that fits under the switch top housing and solder thm directly to the board.

I am a clickyfag so box navy is my go to compared to standard blue as it is a straigh up upgrade, but even linearfags eventually go back to stock red or black linears if not silent reds. Cherry's original line up is a staple for a reason.

I recently have started developing wrist and hand pain from the angle my hands have to sit at my retarded normal keyboard, having to stretch for caps (as hyper), shift, ctrl, alt, meta, tab, and escape all with my pinky, and movement over to the arrow keys. Another noob question: looking at some videos of mechanical keyboards, the buttons on some of those keyboards seem oddly big compared to k120. Is that really so, or is it just the issue of angles or those couple reviewers having small hands?

Most mechanical keyboards do have keycaps a little taller than what's common on rubber dome membrane boards, but some keycaps are shallower. E.g.

Screens and knobs, I get it. I don't like them either. But tight budgets mean compromises.

Black presents some unique problems for cheap keyboards, namely
1. You can't achieve a good white-on-black keycap with the cheaper production methods like dye-sub. Your options are really either pad-printing (cheap but frowned-upon as an inferior method because the printed legends will rub off) or double-shot (expensive to do well).
2. Cheaply-made black boards and keycaps tend to not be dark enough, which makes them look extra cheap

5-pin is the standard these days, it has two extra plastic pins on the bottom for alignment and fit in the PCB, and this is really important for e.g. plateless builds.
Some ancient PCBs don't have slots for those pins, though, and will only accept 3-pin. The pins can be cut off if necessary, so it's not really a disaster if you accidentally buy 5-pins. And most boards have plates so 3-pin is usually fine too. But 5-pin is better most of the time.

I don't care much about the legend, I generally don't look at the keyboard while typing (unless I type in a language using different character symbols, which I'm not used to, but then I tend to just pop up a virtual keyboard for reference because it's more comfortable than looking down) or I'm looking for some character key I use super rarely, so it wearing off is not really an issue for me. I'd prefer it black mostly so it blends in better with my desk. I guess dark brown or gray would also be fine.
I'll take a look at Keychron.
I used that as a description of my default volume level which I had it on.

Everything I've seen says the Jade is factory lubed. I have no idea where that commenter got his info but I think he's wrong.
As for black, I'd just take a gamble on some basic WoB knockoffs from aliexpress. E.g.

How did we come to the point in the industry where I have to pay extra for them to NOT put rgb in my shit?
Anyway, I took a look at Keychron, and the cheapest I could find at 100%/hot swappable was V6 Max barebone for $95, so I'd definitely go over budget with that given that the switches are $19 and those keycaps are $25, which while not out of question, makes me wonder whether it's worth it (probably due to the fact that the keyboard I'm used to is $12).
The next one I found was K10 Max Red for $110 (maybe I could get it for a couple bucks cheaper if one discount I had would still be valid and could be used for it, also I could get different switches then, but if I'm swapping them anyway, then not quite sure about the point of it). What's the difference between those models?
BTW Keychron K10 HE Special Edition looks pretty nice, but that one is almost $180 and magnetic switches sound like a gimmick (and louder than those Jade ones).

K10 max has dedicated indicator LEDs, which the V6 max doesn't. (V6 max uses the rgb under the lock keys as indicator lights. They really should make windowed keycaps for their boards if they're going to do that lol)
I believe the K10 max is tray mount, since they don't say anything about the mounting style, whereas the V6 max is gasket mount. I don't think Keychron does all that good a job with the gasket mount and I modded my V6 max's gaskets to be a little firmer and better-placed.
They Keychron V6 max has a polycarbonate plate, whereas the K10 max has a steel plate. Steel plates are a bit out of fashion now but used to be very common; they're a bit hard and springy and tend to make the keyboard sound higher-pitched. Polycarbonate, by contrast, is soft and flexible, and doesn't 'ping' or sound metallic.
K10 max has a silicone insert in the bottom case, which the V6 max does not.
The V6 comes with "Gateron Jupiter" switches, whereas the K10 comes with "Keychron Super" switches. I don't know what the difference there is, but obviously it doesn't matter to you.
The K10 max is almost a pound heavier according to Keychron's listed specs. Maybe that's just from the silicone insert and steel plate.
